Spottswoode 2018 Cabernet Sauvignon

Winemaker Notes: Aromatic and expressive, the 2018 vintage is a
wine of great beauty and promise. Notes of black cherry, bergamot, red raspberry, and plum encapsulate a sturdy core of powdery tannins and vibrant acidity. Hints of rose and citrus blossom permeate its youthful
and primary aromas. This is a wine crafted with freshness, elegance, and power that will generously reward for years to come.

Peter Michael Au Paradis

Located in the heart of Oakville’s famous “red dirt”, we purchased our Au Paradis in 2009. We spent two years improving this already exceptional property before making our first vintage. The wine is at least 75% Cabernet Sauvignon, with Cabernet Franc making up the remainder. This wine, and the vineyard from which it is sourced, was inadvertently named by Paul and Emily’s youngest son who, during a family campout at age five, awoke to the iconic Northern California view of a blanket of fog spread beneath their mountaintop campsite. “He woke us up and asked if we were in heaven. The view below was indeed so beautiful we almost didn’t mind that it was very, very early, especially because the perfect name for the newest vineyard had at last been found.”

Dom Perignon

Dom Pérignon is vintage champagne only. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon.
After at least eight years of elaboration in the cellars, the wine
embodies the perfect balance of Dom Pérignon, the Plénitude of harmony. Energy dominates on the palate. After a welcoming opening, the wine quickly becomes vibrant and then literally explodes with a surge of effervescence and tonicity. Focused by acidic and bitter notes, the finish brings a penetrating tautness marked by ginger, tobacco and toasted accents.
