Michael Garofola's Cutter Cascadia is a one-man exploration of winemaking in the wilds of the Columbia Gorge. Because his wines are unmanipulated and evolve rapidly upon opening, they can only be understood through tasting...which in the case of this Dolcetto is as intellectually challenging as any American wine can possibly be. It's definitely identifiable as Dolcetto, but that's where any correlation with the classic Piemontese representation ends and the adventure begins.
